Polyphenols and Minor Constituents in Honey from North Macedonia and Bulgaria


 Honey is a highly concentrated sugar solution that rich source of many bioactive compounds including numerous minor constituents. Among them, polyphenols such as flavonoids and phenolic acids are the most important classes pharmacologically active compounds. Together with other constituents they also considered potential chemical markers for botanical geographical origin honey well its authenticity.
 A solid-phase extraction procedure HPLC/DAD/MSn method has been applied identification quantification in from region Bulgaria, North Macedonia, Greece. Solid-phase using Amberlite XAD-2 an adsorbent was used sample preparation enabling purification concentration analysed compounds, mainly polyphenols. In total, 16 were identified 21 extracts, 3 them hydroxycinammic (caffeic, p-coumaric ferulic acid), 5 (naringenin, chrysin, galangin, pinocembrin pinobanksin methyl ether) gluconic acid, quinic ascorbic phenyllactic kynurenic acid abscisic two isomeric forms. Quantification made by external calibration. The results showed developed presented here suitable obtaining qualitative quantitative data honey.
